Buffalo Cauliflower Bites – Get the napkins ready because game day just went Vegan! Frosty adult beverages optional.
Cauliflower is simply amazing, isn’t it?
Whether it’s ground up to make Tacos, or dipped in batter to make Orange Chicken, it seems there’s nothing you can’t do with it.
Like these Buffalo Wings.
Slightly sweet, super sticky, and with just enough kick to make you stand up and take notice.
When my daughter tasted this sauce I swear the first words out of her mouth were ‘OMG’. Is that even a word? Whatever, I do know that’s usually a VERY good sign
These little guys are absolutely perfect for movie night, the big game, or just for snackin’.
I hope you like them as much as we do.
Spicy Buffalo Cauliflower Bites
Take a head of cauliflower and break it up into bite sized pieces.
We’re going to use the same batter as my Orange Chicken Recipe – so mix a cup of flour with a cup of Almond Milk and 2 tsp of Garlic Powder. I also like to add a teaspoon or two of Apple Cider Vinegar to get more of a buttermilk flavor.
Add salt and pepper to taste – it should be like a pancake batter.
Once your batter comes together, drop in your cauliflower pieces and stir to coat evenly. Lay them on a baking sheet (I highly recommend parchment paper) and bake for 15-20 minutes at 450 degrees F.
For the sauce – in a small saucepan mix 1/2 cup of your favorite Ketchup, 1/4 cup of Sriracha Hot Sauce, 1 Tablespoon of Red Wine Vinegar, 1 Tablespoon of Maple Syrup, 1 tsp of Soy Sauce, and a pinch or two of ground cumin.
When that starts to simmer, turn off the heat and let it cool until the cauliflower bites finish baking. Then dump in the cauliflower and stir to coat evenly.
Redistribute the cauliflower on your baking sheet and bake for an additional 5-10 minutes.
Enjoy!

I’m going to cook my way through your website. Actually, feeding this all to my husband to help him eat better. I’m sorry I’m not allowed to eat this fancy. I am following Gerson Therapy which is like vegan on steroids. But, all your stuff sounds so husband friendly and I tried the cauliflower tacos for him last night and he was thrilled!

I made the cauliflower part but was in the mood for Chinese food so i made lemon sauce and rice. I made hubby general’s sauce, they were both delicious. Thanks for the fantastic recipes and ideas.

I’m totally excited about trying this recipe. The only thing I’m not excited about is using white flour. The recipe just says flour, which always confounds me if it’s not specified which type. I assume white is best (from a texture or something standpoint), but has anyone tried this with whole wheat or some other healthy type of flour?
Chuck Underwood
Someone mentioned Chickpea Flour today. If you try Whole wheat I’d use the white Whole Wheat.

Great made with oat flour. Gives a bit more texture x.

Hi Chuck, I made these a couple of weeks ago. My husband and I couldn’t believe how tasty these were and no meat. I also made the BBQ cauliflower wings this week. Again, what amazing flavors. I think my husband prefers the Spicy Buffalo flavor the best. We certainly will be making both recipes again soon. Thanks for the recipes.

I made these the other day for the second time and my husband couldn’t stop eating them they were so good. Thank you for a great recipe.

OMG I made this last night and can’t wait to go home from work and eat the rest! Been daydreaming about it. SOOOOOOOOOOOOOOOOOOOOOO GOOOOOOOOOOOOOOOOOOOOOOOD!

I made it with the oatflour.. That part came out fine. Does anyone have a decent substitute for the ketchup? I tried blending tomato paste and dates. The taste was fine, but I definitely lost a lot in the texture. I would definitely make this again, but need a way to loosen up the buffalo sauce.

Another winner, Chuck! My next batch will have an Asian flair.
