Baked Falafels with Homemade Tzatziki Sauce

If you’ve never had Baked Falafels – you’re really missing out on a treat. Crispy, crunchy, little patties of Spicy Chickpeas smothered in a tangy Cucumber Sauce. Ah….street food never tasted so good!

Ingredients
Tzatziki Sauce
  • 14 oz Firm Tofu
  • 3 Tbs Lemon Juice
  • 1 Tbs Red Wine Vinegar
  • 3-4 cloves Garlic
  • 1 English Cucumber (seeded)
  • 1 Tbs Fresh Dill
  • 6 oz Non Dairy Yogurt
  • 1/2 tsp Salt
Baked Falafels
  • 3 to 4 Pitas (cut in half)
  • 1 can Chickpeas - drained & rinsed (15oz can)
  • 3 cloves Garlic
  • 1/4 med White Onion
  • 1 cip Chopped Spinach (packed)
  • 1/4 cup Dried Parsley
  • 3 Tbs Tahini
  • 1 Tbs Lemon Juice
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Ground Cumin
Instructions
Tzatziki Sauce
  1. Add all ingredients to blender and mix until smooth and creamy
Baked Falafels
  1. Preheat oven to 400 degrees F.
  2. Add all ingredients to Food Processor and pulse until a course meal is formed
  3. Using your hands, form 6-8 Falafel Balls and slightly flatten
  4. Place on parchment lined cooking sheet and bake 25 minutes
  5. Broil for an additional 5 minutes
  6. Flip patties and broil for an additional 5 minutes
Recipe Notes

Simply stuff 1 or 2 Falafels in a Pita and serve with your favorite Salad Fixings (Lettuce, Onion, Cucumber, Tomato). Don't forget the Sauce!
