Ingredients
  • 1 piece Fresh Ginger (about 2")
  • 3 med Sweet Potatoes
  • 4 cups Vegetable Broth (low sodium)
  • 3 Tbs White Miso
  • 1/2 cup Almond Milk (unsweetened)
  • 1/2 tsp Onion Powder
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Salt
Instructions
  1. Peel and mince the ginger
  2. Saute ginger in a few tablespoons of veg broth until softened
  3. Peel and boil the sweet potatoes for about 20 minutes or until soft
  4. Drain the potatoes and mash
  5. Add ginger,veggie broth, and spices and simmer for 10 minutes or so
  6. Blend soup (immersion or blender) until smooth
  7. Add miso to almond milk and whisk until smooth
  8. Slowly stir in miso/milk mixture and heat for another minute or two
  9. Adj spices if necessary
