Fluffy No-Oil Rice Pilaf

A light and fluffy rice pilaf, with added mushrooms, onions, spinach, and bell pepper. This recipe is 100% vegan, and needs no oil or butter to prepare. Super easy and super tasty, this will be your goto rice recipe for all those special occasions.

Ingredients
  • 1 cup Angel Hair Pasta (or Vermicelli)
  • 1/2 Onion (diced)
  • 1/2 Bell Pepper (diced)
  • 2 cloves Garlic (minced)
  • 4 Mushrooms (diced)
  • 1 cup Baby Spinach (chopped)
  • 2 cups Rice (at least 1/4 cup wild rice)
  • 3 cups Low Sodium Vegetable Broth
  • 1/4 cup Soy Sauce (low sodium)
  • 1/4 cup Almond Slivers (optional)
Instructions
  1. Break up pasta into small inch long pieces
  2. Lightly toast pasta and almonds (if using) in a skillet until slightly browned
  3. Add to large pasta pot with a lid
  4. Chop all veggies and add to pot
  5. Rinse and drain rice
  6. Lightly toast rice in same skillet, over med-low heat until dry and toasty
  7. Add rice to pot
  8. Add veggie broth and soy sauce
  9. Bring to a boil and then reduce heat to simmer
  10. Simmer 20 minutes
  11. Remove from heat and carefully remove lid
  12. Drape clean kitchen towel over pan and replace lid
  13. Let rest 5-10 minutes
  14. Remove lid and towel and fluff with fork
  15. Season to taste
