Start off your new year right with these Spicy Buffalo Cauliflower Bites. Perfect for the big game or potluck.

  • 1 head Cauliflower (broken into pieces)
The Batter
  • 1 cup Flour
  • 1 cup Almond Milk
  • 2 tsp Apple Cider Vinegar
  • 2 tsp Garlic Powder
  • Salt and Pepper to taste
The Sauce
  • 1/2 cup Ketchup
  • 1/4 cup Sriracha Hot Sauce
  • 1 Tbs Red Wine Vinegar
  • 1 Tbs Maple Syrup
  • 1 tsp Soy Sauce
  • 1/4 tsp Cumin
  1. Preheat oven to 450 degrees F
  2. Add vinegar to almond milk and whisk to combine

  3. Add garlic powder to flour and whisk to combine
  4. Stir the wet ingredients into the dry to make a thick batter

  5. Salt and pepper to taste
  6. Break cauliflower into bite sized pieces and dip in batter

  7. Ensure each piece is evenly coated

  8. Lay on parchment lined cookie sheet and bake for 15-20 minutes
  9. Add all sauce ingredients to medium saucepan
  10. Whisk to combine and heat to simmer
  11. Once the breaded cauliflower bites are finished baking, carefully stir them in the sauce

  12. Make sure they are evenly coated and then redistribute them on your cookie sheet

  13. Bake an additional 5-10 minutes
