A healthier version of our favorite finger food - Oil Free Baked Taquitos. Perfect for dipping in homemade guacamole, salsa, or my favorite - Green Chile Sour Cream.

- 1 pkg Corn Tortillas
Beans
- 2 cloves Garlic ((minced))
- 1/2 Onion or Leek ((diced))
- 1/2 Red Bell Peppr ((diced))
- 1 can Green Chiles ((4oz))
- 1 can Vegetarian Refried Beans ((15oz))
- 1 can Black Beans ((15oz))
- 1 tsp Chili Powder
- 1/2 tsp Oregano
- 1/4 tsp Cumin
- 1/4 tsp Chipotle Chili Powder
- 2 cups Shredded Hash Browns
- Enough Vegan Cheese Sauce to spread thinly on 30 tortillas
Instructions
- Soften leek, garlic, chile, and bell pepper in a medium saucepan using a tablespoon of water.
- Add refried beans and mix well
- Drain and rinse black beans and add to pot
- Add spices and stir to combine
- Mash with potato masher to make a thick paste, leaving some beans intact
- Add potatoes and stir well
- Cook until soft and bubbly
