Description

A simple Fat Free Refried Beans Recipe using dried beans and spices. Completely Vegan, Oil Free, and Inexpensive! Plus they taste REALLY good!


Ingredients

Scale
  • 2 cups Pinto Beans ((dry))
  • 1/2 Red Onion
  • 1/2 Red Bell Pepper
  • 1 can Chopped Green Chiles ((7oz))
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Chili Powder
  • 1/2 tsp Ground Cumin
  • 1/4 tsp Salt

Instructions

  1. Soak beans overnight with enough water to cover
  2. The next day, drain and rinse beans well and add more water to cover 4" above beans.
  3. Bring to a boil then reduce heat to a simmer.
  4. Cover and simmer 3-4 hrs or until extremely tender.
  5. Add more water as needed to prevent scorching.
  6. Drain and set aside.
  7. In a large skillet, saute veggies in a few Tbs of water until softened
  8. Add 1 to 1 1/2 cups of cooked beans and the spices, stir well to mix
  9. Mash with potato masher or use a blender to create a smooth paste
  10. Return bean mixture to pot and add remaining whole beans.
  11. Stir well to blend and serve.
