Description
A simple Fat Free Refried Beans Recipe using dried beans and spices. Completely Vegan, Oil Free, and Inexpensive! Plus they taste REALLY good!

- 2 cups Pinto Beans ((dry))
- 1/2 Red Onion
- 1/2 Red Bell Pepper
- 1 can Chopped Green Chiles ((7oz))
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
- 1/2 tsp Chili Powder
- 1/2 tsp Ground Cumin
- 1/4 tsp Salt
Instructions
- Soak beans overnight with enough water to cover
- The next day, drain and rinse beans well and add more water to cover 4" above beans.
- Bring to a boil then reduce heat to a simmer.
- Cover and simmer 3-4 hrs or until extremely tender.
- Add more water as needed to prevent scorching.
- Drain and set aside.
- In a large skillet, saute veggies in a few Tbs of water until softened
- Add 1 to 1 1/2 cups of cooked beans and the spices, stir well to mix
- Mash with potato masher or use a blender to create a smooth paste
- Return bean mixture to pot and add remaining whole beans.
- Stir well to blend and serve.
