Description
A light and fluffy rice pilaf, with added mushrooms, onions, spinach, and bell pepper. This recipe is 100% vegan, and needs no oil or butter to prepare. Super easy and super tasty, this will be your goto rice recipe for all those special occasions.

			- 1 cup Angel Hair Pasta ( (or Vermicelli))
 - 1/2 Onion ((diced))
 - 1/2 Bell Pepper ((diced))
 - 2 cloves Garlic ((minced))
 - 4 Mushrooms ((diced))
 - 1 cup Baby Spinach ((chopped))
 - 2 cups Rice ((at least 1/4 cup wild rice))
 - 3 cups Low Sodium Vegetable Broth ( )
 - 1/4 cup Soy Sauce ((low sodium))
 - 1/4 cup Almond Slivers ((optional))
 
Instructions
- Break up pasta into small inch long pieces
 - Lightly toast pasta and almonds (if using) in a skillet until slightly browned
 - Add to large pasta pot with a lid
 - Chop all veggies and add to pot
 - Rinse and drain rice
 - Lightly toast rice in same skillet, over med-low heat until dry and toasty
 - Add rice to pot
 - Add veggie broth and soy sauce
 - Bring to a boil and then reduce heat to simmer
 - Simmer 20 minutes
 - Remove from heat and carefully remove lid
 - Drape clean kitchen towel over pan and replace lid
 - Let rest 5-10 minutes
 - Remove lid and towel and fluff with fork
 - Season to taste
