Green Chile Hummus

Description

You may think that's Guacamole in the photo below, but you'd be mistaken.  You see, I was in the mood for some Hummus and happen to spy a can of Hatch Green Chiles in my pantry.  What?  Green Chile Hummus?  Could it actually work?  Only one way to find out!


Ingredients

Scale
  • 1 can Chickpeas ((15 oz))
  • 1/2 cup Cilantro
  • 1 can Hatch Green Chiles ((4oz))
  • 1 Jalapeno ((seeds removed))
  • 1/2 Lime (peeled but some zest remaining)
  • 1 tsp Minced Garlic ((about 2 cloves))
  • 3/4 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1 Tbs Water ((for thinning))

Instructions

  1. Drain and rinse the Chickpeas and add them to your blender.
  2. Drain the Green Chiles and add them to your blender too. 
  3. Remove the seeds and membrane from the Jalapeno and add that to the mix. 
  4. Peel about 1/2 a Lime - but leave some zest on - and toss that in as well.  (And I don't mean just the juice either, toss in the entire half of the partially peeled lime. )
  5. Add everything else and blend on high until nice and smooth.   Add the tablespoon of water if you need to thin it down some and help it blend.
