Ingredients

- 1 onion
- 2 cups dried pinto beans
- 4 cups low-sodium vegetable broth
- 4 heaping tsp minced garlic
- 8oz fresh greens (collard, mustard, spinach, kale)
- 1-2 tbs your favorite hot sauce (cholula, franks, tabasco)
Instructions
- Dice onion and add to instant pot
- Rinse beans and add to pot
- Add the garlic and broth and set lid to sealing
- Cook on manual 35 min
- Allow pressure to release naturally for 10 min
- Carefully release any remaining pressure
- Stir in greens and hot sauce
- Serve over rice
