Description

People STILL think that as vegans, we deprive ourselves of good food! Looking at these Vegan Italian Sausages... do I look deprived?! 🤣

Ingredients

Units Scale

Wet Ingredients

  • 1/2 cup white beans (rinsed and drained)
  • 1 cup low-sodium vegetable broth
  • 2 Tbs low-sodium soy sauce
  • 1 Tbs tomato paste
  • 1 tsp chipotles in adobo

Dry Ingredients

  • 1 1/2 cup vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 1/2 tsp fennel seed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Mix the wet ingredients in a blender until smooth
  2. In a large bowl, whisk all of the dry ingredients together
  3. Pour the wet into the dry and mix just until a soft dough is formed.
  4. Knead the dough for 30 sec to 1 minute and then separate into even pieces.
  5. For 4 FAT sausages, divide them into 4 pieces.  I would probably try for 5.
  6. Roll and form each piece of dough into a sausage shape and roll tightly in parchment paper, and then again in foil - twisting the ends sealed.
  7. Steam in your Instant Pot on the trivet and 1 cup of water for 40 min.  Allow 10 minutes for the steam to vent naturally.
  8. Place on a plate in the fridge and let them chill for at least 30 minutes.  (the paper will be easier to remove)
  9. Dry fry in a skillet or use a George Foreman like I did to get the grill marks.
  10. Dress up your Vegan Italian Sausages however you like them!
