Simple White Bean Pasta

Description

This creamy White Bean Pasta uses just 10 ingredients to make a simple but elegant dinner using items found in any pantry.


Ingredients

  • 8 oz Penne Pasta
  • 4 cloves Garlic ((minced))
  • 1 can White Beans ((15oz))
  • 1 can Chopped Tomatoes ((15oz))
  • 1/2 cup Roasted Bell Peppers
  • 2 Tbs Lemon Juice
  • 2 Tbs Nutritional Yeast
  • 1 tsp Rubbed Sage
  • 1/2 tsp Garlic Salt
  • 1/4 tsp Ground Cumin

Instructions

  1. Preheat oven to 400 degrees F.
  2. Roast 2 whole Bell Peppers on a parchment lines cookie sheet for 20 minutes
  3. Turn peppers and roast other side for an additional 20 minutes
  4. Place roasted peppers in Ziplock Freezer Bag to steam.
  5. Saute garlic in 4-5 Tbs veg broth until softened
  6. Slowly stir in beans and simmer until heated through
  7. Carefully cut off tops of peppers and remove all seeds and outer skin
  8. Blend beans, peppers, and remaining spices in high-speed blender until smooth
  9. Prepare Pasta according to package directions and drain
  10. Return pasta to pan and add drained tomatoes, stirring well to mix
  11. Fold in sauce and stir until pasta is coated evenly.

Notes

The prep time includes roasting your own peppers . If using store bought - the prep time is substantially less.
