Description

I got inspired by my yoga program and made this yummy Grilled Vegan Panini. It's LOADED with veggies and you don't even need a panini press.


Ingredients

  • wraps or tortillas of your choice
  • hummus
  • roasted red bell pepper
  • avocado slices
  • baby spinach
  • portobello mushrooms, sliced
  • pickles
  • cilantro or parsley
  • tomato slices
  • balsamic glaze

Instructions

  1. Spread 1-2 tablespoons of hummus down the center of your wrap
  2. Top with a few slices of roasted red bell pepper and avocado
  3. Add a few rings of red onion
  4. Add a layer of baby spinach and a few mushrooms
  5. Add pickles (or cucumber)
  6. Add another layer of greens such as cilantro or parsley
  7. Add a few slices of tomato
  8. Drizzle veggies with a little balsamic glaze
  9. Fold into a burrito shape and grill on med-high heat for 5 minutes
