Description
I got inspired by my yoga program and made this yummy Grilled Vegan Panini. It's LOADED with veggies and you don't even need a panini press.
Ingredients
- wraps or tortillas of your choice
- hummus
- roasted red bell pepper
- avocado slices
- baby spinach
- portobello mushrooms, sliced
- pickles
- cilantro or parsley
- tomato slices
- balsamic glaze
Instructions
- Spread 1-2 tablespoons of hummus down the center of your wrap
- Top with a few slices of roasted red bell pepper and avocado
- Add a few rings of red onion
- Add a layer of baby spinach and a few mushrooms
- Add pickles (or cucumber)
- Add another layer of greens such as cilantro or parsley
- Add a few slices of tomato
- Drizzle veggies with a little balsamic glaze
- Fold into a burrito shape and grill on med-high heat for 5 minutes
