Ingredients

			- 1 piece Fresh Ginger ((about 2"))
 - 3 med Sweet Potatoes
 - 4 cups Vegetable Broth ((low sodium))
 - 3 Tbs White Miso
 - 1/2 cup Almond Milk ((unsweetened))
 - 1/2 tsp Onion Powder
 - 1/2 tsp Garlic Powder
 - 1/2 tsp Salt
 
Instructions
- Peel and mince the ginger
 - Saute ginger in a few tablespoons of veg broth until softened
 - Peel and boil the sweet potatoes for about 20 minutes or until soft
 - Drain the potatoes and mash
 - Add ginger,veggie broth, and spices and simmer for 10 minutes or so
 - Blend soup (immersion or blender) until smooth
 - Add miso to almond milk and whisk until smooth
 - Slowly stir in miso/milk mixture and heat for another minute or two
 - Adj spices if necessary
