Vegan Tuna Salad, without the tuna! Garbanzo Beans, diced veggies, and a cashew based dressing come together in this healthier version of an American classic.

- 1/2 cup Cashews ((unroasted))
- 1/2 cup Water
- 1 can Chickpeas ((15oz))
- 1/2 cup Red Onion ((minced))
- 1 rib Celery ((minced))
- 1 small Carrot ((minced))
- 2 Tbs Dill Pickle Relish
- 3 Tbs Lemon Juice
- 1 Tbs Yellow Mustard
- 2 tsp Apple Cider Vinegar
- 1 tsp Nutritional Yeast ( )
- 1 tsp Low Sodium Soy Sauce
- 1/2 tsp Garlic Powder
Instructions
- Add the cashews and water to your blender to let them soak
- Mash garbanzo beans in a large bowl using a potato masher, or fork
- Add diced veggies and stir
- All the remaining liquid ingredients to the blender with the cashews and water and pulse until smooth.
- Stir dressing into 'tuna' .
