I could never find Fat-Free Chipotle Adobo Sauce in the I decided to make my own. Not only was it super easy, the flavor is simply amazing!


  • 10 Ancho Chile Peppers
  • 10 Guajillo Chile Peppers
  • 3 cloves garlic
  • 1 cup water
  • 1/4 cup Apple Cider Vinegar
  • 2 Tbs Tomato Paste
  • 2 tsp Brown Sugar (or sweetener of choice)
  • 1 tsp Mexican Oregano
  • 3/4 tsp Chipotle Chili Powder
  • 1/2 tsp Cumin
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/8 tsp Cloves


  1. Preheat oven to 250 degrees F
  2. Arrange chiles and garlic on a parchment-lined cookie sheet
  3. Roast for 10 minutes
  4. Remove skin from garlic and set aside for now
  5. Remove stems from chiles and make a slit down the length of each chile
  6. Remove as many seeds and ribs as possible, placing cleaned chiles in a large soup pot
  7. Please wash your hands after handling chiles - the oils can burn your eyes
  8. Add enough water to the pot to barely cover chiles and bring to a boil
  9. Remove from heat and cover.  Let sit 10 minutes.
  10. Remove chiles from pot and place in a blender along with 1 cup of the chile water.
  11. Add all remaining ingredients and blend until smooth
