    Healthy Oatmeal Blueberry Muffins

    Trying to get my 3yr old grandson to eat any anything healthy, is like - well I'm sure many of you know.  It's darn near impossible.

    So imagine my surprise when he wolfed down one of these Healthy Oatmeal Blueberry Muffins.

    Healthy in that I used 1 full cup of oat flour instead of all-purpose, and I used applesauce in place of any eggs or oil.

    • Sweet
    • Moist
    • Full of healthy ingredients like applesauce. oatmeal, and blueberries....

    By golly, I think we have a winner.

    So when you're craving that sweet treat, or just want something a little different for breakfast...  Or like me, you're trying to get the impossible toddler to eat something healthy....

    Give these babies a try.  I think you'll like them.

     

     

    Healthy Oatmeal Blueberry Muffins

     

    Oat flour is pretty expensive in the grocery store.

    So make your own.

    All I did is take an old coffee grinder and ground up regular old-fashioned oats into a fine flour.  Easy, quick, and TONS cheaper than buying a store-bought bag.

    I just ground up little by little until I had a full level cup of flour.

    Then just mix in the other dry ingredients in one bowl, the wet ingredients in another, and combine the two.

    Fast and Easy.

    Fold in your blueberries at the end and you've got enough batter for 12 yummy oatmeal blueberry muffins.

    Use paper muffin cups to avoid using any spray or oil.

    Bake for about 20 minutes at 350 degrees.

    Mmmm......muffins.  And healthy muffins at that.

    Description

    These Healthy Oatmeal Blueberry Muffins are guilt-free treats. Made from oat flour, applesauce, and blueberries - these muffins are fat free, 100% vegan, and super yummy.


    Ingredients

    Scale
    • 1 cup Oat Flour
    • 1 cup All-Purpose Flour
    • 2 tsp Baking Powder
    • 1 tsp Baking Soda
    • ¼ cup Brown Sugar
    • 1 tsp Cinnamon
    • ¼ tsp Nutmeg
    • ¼ tsp Salt
    • 1 cup Unsweetened Applesauce
    • 2 Tbs Maple Syrup
    • ¾ cup Blueberries

    Instructions

    1. Mix all dry ingredients in a large mixing bowl
    2. Mix the wet ingredients in another smaller bowl
    3. Combine the wet and the dry and mix until combined
    4. Fold in blueberries
    5. Use muffin paper cups to avoid using any spray or oil
    6. Use a tablespoon to drop level spoonfuls into a muffin pan
    7. Fill each cup at least ¾ full.
    8. Bake at 350 degrees for 20 min

      These are excellent. I made a batch last night and will make another batch today! For the flour, I used a mix of AP flour and sweet potato flour (trying to use up both). They came out moist and delicious! Thanks, Chuck, for another great recipe.

      To keep the blueberries from falling to the bottom of the muffins while baking, roll them in the flour mixture before adding to wet ingredients. It works with any type of berry, fresh or frozen.

      Made with whole wheat flour instead of all purpose.
      Added cup of chopped pecans
      Delicious and easy

      Delicious, I added ground flax seed 1/4 cup and 3/4 cup whole wheat flour which I use instead of white. Also brown sugar is not vegan. It is white sugar which is not vegan and molasses. Try turbinado sugar. Bone char is not used to process it.

      So I did have to have about 3/4 cup unsweetened almond milk to mix the batter as it was way too dry but they calempit amazing. I will be making this recipe again! Not to sweet. Relatively clean, nearly 100% WFPB, aside from the brown sugar. I used WW flour and oat flour. I used pumpkin purée instead of applesauce because that is all I had on hand. Thanks for the recipe idea!

      I'd change the brown sugar to turbinado sugar because after all, brown sugar is nothing more than white granulated sugar with molasses added. And white granulated sugar is not vegan. I would also change the all purpose flour to spelt flour or whole wheat for more nutrition. But what about a binder?

      I microwaved the brown sugar to liquid by mistake and added 1tb. flax meal and water as an egg substitute. Moist and delicious 🙂

      Tried these yesterday and while they came out very good in the end, my batter was so dry that I ended up having to add 1.5 cups of almond milk just to get all the flour to mix in. Do you know where I went wrong?
