My Air fryer is one of my favorite additions to the kitchen. They are an all-in-one countertop appliance that makes food crispy and tasty, just like a deep-fryer, but without all the deep-fried fat, calories, and guilt!
Almost any recipe can be an air fryer recipe, here you’ll find my favorites. We watch my grandson 3-4 days a week, and his Air Fried Tofu is always marinating, ready for the air-fryer!

Mary's Mini Recipes
Mary's Mini is a 10-day restrictive diet invented by Dr. John McDougall and his wife Mary. The idea is you pick one type of starch, say potatoes, and then eat only that (with veggies) for 10 days. I have done it twice, lost weight both times, and these are some of the recipes I created to help me stay on track. My Green Chile Potato Soup is a fan favorite as well as my Cheese Sauce.

My favorite sandwich growing up was Bologna and ketchup. Yep, pretty gross now that I think about it. Fortunately, now I have all these healthier options. My favorites? My Chickpea Tuna Salad is one, and I love my Bahn Mi which was inspired by my favorite brewery here on the Oregon Coast.

Soups, Stews, & Chili
I LOVE CHILI. So that was one of the first recipes I had to make, a good, hearty, Texas-style chili. And I guess I'm not the only one because it has won chili cookoffs all over the United States. I really need to enter it myself one day!
Soy curls are dried non-GMO soybeans that have the same texture as cooked chicken. And you can do some amazing things with them once you know how. I love the Mongolian Soy Curls and my wife loves my 'Chicken' & Dumplings.
When I need a quick, healthy meal - stir frys are always my first choice. And for picky eaters, my Grandson's Favorite Tofu is always a win.
Summer Picnic Recipes
Don't ever feel left out when you're going to a cookout. In fact, if you're not careful they'll be wanting to try all of YOUR food instead! Make sure you try my legendary Carrot Dog recipe too!
