My Air fryer is one of my favorite additions to the kitchen. They are an all-in-one countertop appliance that makes food crispy and tasty, just like a deep-fryer, but without all the deep-fried fat, calories, and guilt!
Almost any recipe can be an air fryer recipe, here you’ll find my favorites. We watch my grandson 3-4 days a week, and his Air Fried Tofu is always marinating, ready for the air-fryer!
If you have a few pounds to lose, or maybe you're trying to improve your blood pressure, cutting back on the fats will help. These are the recipes I used on my Back2Basics program after I had a stroke in 2020.
Beans & Legumes
Beans are the ultimate comfort food, and they're so inexpensive! Growing up in the south, my mom ALWAYS had a big pot of Soup Beans on, and in Costa Rica they have Gallo Pinto for Breakfast!
Breads & Muffins
Bread is my WEAKNESS!! So whether you just want to make an easy loaf of bread or some homemade corn tortillas - I got you covered.
Dips, Sauces, & Gravy
I think gravy was the one thing that made my transition to a whole food plant-based diet tolerable. Because gravy goes on anything, am I right? Especially my famous Brown Gravy. And of course, since I grew up on Biscuits & Sausage Gravy, I had to replicate those too 🙂
I never worry about what others are having during the Holidays, because I have lots of my favorites right here, from my Tamales to Mom's Meatloaf - I have a little bit of everything.
The instant pot sure makes pressure cooking easier, that's for sure. From dried beans with NO soaking to delicious homemade refried beans to even chili - in less than an hour!
Mary's Mini Recipes
Mary's Mini is a 10-day restrictive diet invented by Dr. John McDougall and his wife Mary. The idea is you pick one type of starch, say potatoes, and then eat only that (with veggies) for 10 days. I have done it twice, lost weight both times, and these are some of the recipes I created to help me stay on track. My Green Chile Potato Soup is a fan favorite as well as my Cheese Sauce.
If you or someone you know is having a hard time transitioning to a meat-free diet, this is the section for them. I've recreated all my favorites from my Holiday Meatloaf to Mom's Hamburger Helper. Be sure and try my Tacos and my Carrot Dogs - they're pretty famous.
Oi! I love Mexican Food! I lived in Albuquerque for 10 years and grew to LOVE it! The Green Chile Stew and Posole are 2 of my favorites, and I always have some Red Sauce in the fridge.
Pasta & Rice Dishes
A lot of my favorite comfort-food meals were pasta or rice. Remember Mom's Hamburger Helper or Beef Stroganoff? I have vegan versions here as well as a spaghetti sauce that any carnivore will love.
I've had the pleasure of meeting Dr. John McDougall several times, and he DOES love his potatoes. The ultimate comfort food. My Oven-Baked French Fries was my very first viral recipe.
Salads & Dressings
Green leafy vegetables are an important part of any healthy diet, but finding a healthy DRESSING...one that's not loaded in calories.... that's the trick. Here are a few of my favorites. The Greek Salad is a fan favorite,
My favorite sandwich growing up was Bologna and ketchup. Yep, pretty gross now that I think about it. Fortunately, now I have all these healthier options. My favorites? My Chickpea Tuna Salad is one, and I love my Bahn Mi which was inspired by my favorite brewery here on the Oregon Coast.
Smoking, Grilling & BBQ
Ok guys, don't toss out that smoker just yet. You can make some INCREDIBLE Vegan delicacies on your grill and smoker, like my famous Carrot Dogs.
Soups, Stews, & Chili
I LOVE CHILI. So that was one of the first recipes I had to make, a good, hearty, Texas-style chili. And I guess I'm not the only one because it has won chili cookoffs all over the United States. I really need to enter it myself one day!
Soy curls are dried non-GMO soybeans that have the same texture as cooked chicken. And you can do some amazing things with them once you know how. I love the Mongolian Soy Curls and my wife loves my 'Chicken' & Dumplings.
When I need a quick, healthy meal - stir frys are always my first choice. And for picky eaters, my Grandson's Favorite Tofu is always a win.

Don't ever feel left out when you're going to a cookout. In fact, if you're not careful they'll be wanting to try all of YOUR food instead! Make sure you try my legendary Carrot Dog recipe too!
