Spaghetti, Bruschetta, Potatoes, Pizza, even Toast ..... there are SO many times I've sent people to my recipes that include this simple Vegan Parmesan.
I'd say it's high time it has its own.....wouldn't you?
Sure you can actually BUY vegan parmesan in the stores. But why would you when you can easily make your own from just 4 simple ingredients?
Yep four - count 'em.....
- Cashews
- Nutritional Yeast
- Garlic Powder
- Salt
Easy huh? Throw them into your favorite food processor or chopper and grind away.
I store mine in a recycled Parmesan Cheese container....yeah those green ones.....you know - with the word KRAFT on it?
Perfect container wouldn't you say?
I ALWAYS have some of this on hand as my wife absolutely LOVES the stuff.
Now you can enjoy it too. 🙂
Vegan Parmesan Cheese
This is probably going to be one of the easiest recipes yet - but trust me, you will be pshaking this stuff on everything.
Simply take the raw cashews (by raw I mean unroasted and unsalted) and add them to a chopper, food processor, or a high speed blender.
I buy raw cashews in the bulk section of my grocer store, right alongside the nutritional yeast.
Add in the nutritional yeast, garlic powder, and salt and give it a whirl.
Simply process it until it's powdered, like real Parmesan Cheese. Sometimes I'll leave it a little chunkier, but that's completely up tpo you.
I buy raw cashews in the bulk section of my grocer store, right alongside the nutritional yeast.

Have you tried noochy licous??

Your recipes have always worked, like your “Best Ever Fat-free Vegan Gravy” so I went to your site first for a vegan parmesan recipe. Looks easy and good especially like that your wife loves it—a great recommendation from someone who has tried it! Note pls look up lead in nutritional yeast as it is a problem. Red Star Nutritional Yeast did not have lead in it. It is expensive but its safety is key.

I find if you add a pinch of black salt to vegan parm it gives it that "socky" taste that parm has.

If you want to try a recipe without cashews that I have been working on just let me know and I will send it to you

I would be interested in that 🙂

If you use almond meal in place of the whole cashews, you get a similar result without having to use the food processor. Just mix everything in a bowl. Almond meal is available at many stores, including Trader Joe's.

Hi,
Will it work without the nutritional yeast?
Thanks
Amanda Lea Kiannejad
FWIW- I find that if you add just a pinch of black salt to your vegan parm, it gives it that sock-y taste that parm has.
Deb
Thanks for the idea.

I found this post after googling "can I add back salt to vegan cashew parmesan," so thanks for answering my question!

Do you have a picture of the finished product?

So I broke down and decided to make this.. and OMG I love it. No more nasty store bought for me. I am going to carry a little jar of this with me for when I get a salad or potato while I'm out.
Never leave home without it!!

Do you soak the cashews?
Chuck Underwood
No. You do not.

How long can this be stored for?

I'm in the UK and nutritional yeast is a bit harder to come by, so I substituted Marmite. The result is a bit clumpier but had greatflavor! Can't wait to try it with the correct ingredients. (ordered some on Amazon)
