    Chewy Vegan Brownies

    Sometimes you just gotta have something sweet.  You know?

    Something rich, chewy, and most importantly …..  chocolaty!

    So just for those special occasions, those special treat days, when you just have to munch on something sweet, let me introduce you to some pretty gosh darn good

    Chewy Vegan Brownies

     

    Mind you these are not everyday brownies.  Oh no.

    They are healthified somewhat by subbing Flax Meal in for the eggs, and applesauce in for the butter.

    But I wouldn't exactly call these brownies healthy.  Not quite.

    Vegan - yes.  Healthy - doubt it.  Especially if you eat the whole pan like I almost did.

    But they are brownies!  

    Little moist squares of chewy, chocolaty goodness that demand to be eaten up in one sitting.

    So with that being said, your sugar high awaits you….

    Description

    Chewy Vegan Brownies so rich, so chewy, they demand to be eaten. All of them. Now!


    Ingredients

    Scale
    • ½ cup Unsweetened Applesauce
    • ½ cup Sugar ( )
    • ¼ cup Maple Syrup
    • 2 Tbs Ground Flax Seeds
    • 6 Tbs Hot Water
    • 1 tsp Vanilla Extract
    • ¼ tsp Salt
    • ¼ tsp Baking Powder
    • ⅓ cup Unsweetened Cocoa Powder
    • ½ cup Flour
    • ½ cup Chopped Walnuts ((optional))

    Instructions

    1. Preheat oven to 350 degrees F
    2. Add ground flax seed to the hot water, stir then set aside
    3. In a large bowl mix applesauce, sugar, and maple syrup until combined
    4. Stir in flax seed mixture and vanilla and stir to combine
    5. Using an electric mixer, blend in cocoa powder
    6. Finally blend in flour, scraping sides, until a thick bater if formed.
    7. Fold in the walnuts if you're using them.
    8. Line a 8" pan with aluminum foil allowing some to overhang
    9. Cut a 8" square of parchment paper and lay down on top of foil
    10. Pour in batter spreading evenly
    11. Bake for 25-30 minutes or until a toothpick comes out clean
    12. When done, grab foil to lift brownies out to cool
    13. Parchment paper will peel away when completely cool

      Chuck, did I miss something? Recipe calls for salt and baking powder but that’s not listed to add in the instructions. I added when I added the flour. Brownies are in the oven cooking!

      Wow, these brownies are intense. I recommend cutting them into small squares, because they are very fudge-like. I went by the recipe and used the walnuts. Dinner guest wanted to take some home. Seriously good!

      These look AMAZING! I absolutely adore the recipes on your page. I was wondering if there were any other options for the maple syrup that weren't so high in sugar? And would a GF option work (coconut flour, almond flour, beans)? I cannot wait to try them! Thanks! 🙂

      Is flaxseed meal the same as ground flaxseed, and if not can I use it instead? Also, can I use brown rice flour?

        Flaxseed meal is the same as ground flaxseed, yes. I don't know about the flour though.

        Emily is right about the flax seed, but I would still mix it up with the hot water, this is what makes it gel. I couldn't tell you how it would come out with rice flour though….give it a try?
