I know, some people don't like mushrooms. I get that and for those of you who don't, probably better to skip this post. Sorry.
But I am constantly looking for different things my picky grandson will try. He used to like the Morning Star fake vegan bacon, and thankfully we got him switched over to my Smoky Maple Tofu Bacon. Nothing wrong with the Morning Star, but processed foods are....well, processed.
And he DOES love bacon, so I am hopeful with this recipe.
I simply combined my Bacon Marinade with Portobello Mushrooms this time and then air-fried them. Any kind of mushroom will work, but the big Portobello Caps make the best bacon-like strips. In this recipe, I had a small 6oz package of the caps, and a 1 pounds package of the Baby Bellas and they came out wonderful.
If you don't own an air fryer yet, I can't tell you how much I use mine. I easily use it more than my Instant Pot for air-frying Tofu, french fries, or even crisping up a corn tortilla to make Tostadas.

Savory Air Fryer Mushrooms
Choose your mushrooms (I like Portobello), and give them a good wipe to clean off any dirt or debris. I've read it is NOT recommended you rinse them under running water. Mushrooms are like 92% water anyway, so adding more water will reduce their ability to soak up our marinade.
I used a 16 oz package of Baby Bellas and a 6 oz package of Portobello Caps and there was very little marinade leftover. For the baby Bellas, I simply cut them in half. For the larger caps, I cut them into ½" slices. I also removed the big stems.
Add them to whatever container you want to marinate your mushrooms in. A flat casserole dish will work, but I ended up using a 1-gallon ziplock baggie so I could flip and slosh the marinade around to make sure everything got coated.
Speaking of marinade, now that the mushrooms are sliced I guess we should make some. Just whisk all the ingredients together and pour over your mushrooms.
That's it. Let them sit in your fridge and soak for at LEAST an hour, but the longer the better. Yes, even overnight will work too.
All that's left to do is drain off the marinade and place them in your air fryer basket. If you have one of the smaller air fryers, you will have to cook them in batches obviously, but with mine, they all fit at once.
Air fry at 400° F for 20 minutes, stopping to shake your basket every 5 minutes or so.
NOTE: As an alternative method, you can just fry these in a skillet.
Done. Use these little guys as an appetizer or snack, or add them to your baked potatoes, beans, rice, soups. whatever.

Ingredients
- 16 - 22 ounces fresh mushrooms
- ¼ cup low sodium soy sauce (use Tamari if you are GF)
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon liquid smoke
- ¼ teaspoon black pepper
Instructions
- Wipe mushrooms clean and slice.
- Smaller mushrooms can be cut in half while the larger portobello caps can be cut into ½" slices.
- Place mushrooms into a large bowl, casserole dish, or ziplock bag
- Mix all marinade ingredients and pour over mushrooms.
- Allow the mushrooms to marinate for at least 1 hour, preferably longer. Mixing occasionally.
- Drain mushrooms and place on air fryer basket, working in batches if necessary.
- Air fry at 400° F for 20 min, shaking basket every 5 minutes

I think this version of your maple bacon marinade is even better than the original!
It's great with the mushrooms, but lately I've been using a double batch of the marinade plus a little boiling water to rehydrate Butler's soy curls and then baking or air frying them and using the crispy soy curls for mock BLTs (bacon lettuce and tomato sandwiches). Yum! This is one of my omni family's favorites, too, although some prefer the mushrooms and others the soy curls.
