What would the big game be without some kind of finger food to munch on? These Vegan Parmesan Cauliflower Wings are sure to be the hit of the party, so make sure to make enough to go around!
I was originally going to do another makeover of an older recipe, my Spicy Buffalo Cauliflower Bites. It's an older recipe that seriously needs some newer photos, but then I came across a Parmesan Gnocchi Recipe that caught my eye and well - those wheels started turning.
My Vegan Parmesan is easy enough to make, and by eliminating the batter from my old recipe and using gluten-free bread crumbs, not only could I have a brand new recipe but one that is completely gluten-free as well.
So that's the direction I took and I am happy I did, or should I say my wife is as she loves the new version.
I used fresh, organic cauliflower and tossed the florets in just enough almond-buttermilk to get some seasoning to stick, then tossed in some gluten-free breadcrumbs mixed with my vegan parm and baked them until they were crispy and golden brown.
Yum. I will admit, they are a little messy but the flavor is outstanding. My daughter said it reminded her of the mozzarella sticks we used to get, especially if you dip them in my homemade Vegan Marinara.

Vegan Parmesan Cauliflower Wings
I used a small head of cauliflower, about 1.5 lbs, and removed the leaves and the stalk. Then I broke it into bite-sized pieces and tossed them into a large zip-lock.
Next, I made a Vegan buttermilk by mixing some unsweetened almond milk and lemon juice and poured that into the bag as well. Shake to thoroughly coat.
Finally, I mixed some of my very own Vegan Parmesan, garlic powder, and salt, and then added some bread crumbs I found at my local Fred Meyer. I'll have all the exact amounts down in the recipe box below.
The bread crumbs I used were Kroger® Gluten-Free Italian Style Bread Crumbs and are made with rice flour and are completely oil-free. Of course, use whatever you can find or have available.
Once the seasoning is mixed, toss that into the bag and once again, shake to coat.
All that's left now is to spread them out onto a parchment-lined cookie sheet and bake at 425° F for 20 minutes. Give them a flip and bake an additional 10 minutes or so until golden brown.
Feel free to use whatever dipping sauce you like (if any) but I recommend my Vegan Marinara. It is SO good!

Ingredients
- 1 small cauliflower (about 1.5 lbs)
- ¼ cup unsweetened almond milk
- 1 Tbs lemon juice
- ½ cup bread crumbs (see note)
- ¼ cup vegan parmesan
- ½ tsp garlic powder
- ½ tsp salt
- (note: I used Kroger Gluten-Free Italian Style Bread Crumbs)
Instructions
- Preheat oven to 425° F
- Remove leaves and stem from cauliflower and break the florets into small pieces
- Whisk the almond milk and lemon juice together and toss with cauliflower to coat
- Mix the breadcrumbs, parmesan, garlic powder, and salt together and toss with the cauliflower to coat
- Spread pieces out onto a parchment lined baking sheet and bake for 20 minutes
- Carefully flip pieces over and bake an additional 10 minutes
- Serve with your favorite dipping sauce if desired
