Who Is Chuck Underwood and how did Brand New Vegan get started?
Basically, 3 different events in my life all led up to my buying that Brand New Vegan domain name.
- My own personal health
- My wife getting hospitalized
- And the threat of losing my job
I explain it all and give you some of the same resources I watched or read when I first got started.
Boring? Hope not.
Entertaining? Maybe.
But if nothing else, you'll hopefully get the picture that I'm just a regular person like all of you, doing whatever he can to keep himself and his family fed, comfortable, and healthy.

My Wife's Meningioma
I told you it was big.
It took 14 hrs to remove the stupid thing, one millimeter at a time.
My wife was in Rehab for another week after surgery, just to make sure she could function normally: Physical Therapy, Speech Therapy, Occupational Therapy, that kind of stuff.
We were very blessed to have had an amazing team of Neurosurgeons at Legacy Emmanuel, and also the good folks over at the Rehab Institute of Oregon. (RIO)
Today, you could never tell anything had happened.

Chuck just listened to your podcast on "Who is Brand New Vegan" and just wanted to comment on a couple of things. I'm 56 and in oct of 2018 had a heart stent put in because of cholesterol build up. I too for the last 4 or 5-years watch all the shows you mentioned including the china study. I grew up here in the deep south on food fried with pride but after surgery, I knew what I needed to do hands down. I thank God for Dr. Esselstyn along with all the other doctors and shows that show how food matters from birth to death, pertaining to our health. With that said, thank you for your recipe's you placed on the web. I have been having to learn along with my wife a new way of cooking without meat, oil or dairy and trying to make it taste good too. I just make your chili on this cold December day and it's delicious! Thank you again for all that you are doing.
